A gently simmered tomato sauce with five vegetables, soft red lentils and wholewheat spaghetti.

This is a sauce to make slowly and share. Carrot brings sweetness, mushrooms add savoury flavour, and courgette and pepper soften into the tomatoes. Red split lentils give the sauce body as they cook; their colour fades and their edges break down. Wholewheat spaghetti adds a pleasantly nutty bite.
The five vegetables in the name describe the ingredients, not a promise about five daily portions. Let children notice colours, smells and textures without asking them to finish a set amount. Everyone can begin with a comfortable serving and ask for more. This recipe is designed for school-age children cooking alongside an attentive adult.

Equipment
- Kitchen scales and measuring jug
- Fine sieve
- Chopping board and adult knife
- Large heavy saucepan with lid
- Wooden spoon
- Large pasta pan
- Colander
- Four serving bowls
Make it step by step
1. Wash, weigh and rinse
Wash hands and clear a cold work area away from the hob. Rinse the carrot, courgette and pepper under running water; clean the mushrooms. Measure the pasta and set it aside. Tip the lentils into a fine sieve, check for any tiny stones, then rinse with cold water until the runoff is less cloudy. Let them drain. Read the lentil packet together: red split lentils are needed here, not canned or whole green lentils.

2. Prepare little pieces
The adult peels the carrot if needed and cuts all four fresh vegetables into small, roughly 5 mm pieces, keeping fingers tucked back. Finely chop the garlic separately. Smaller pieces soften evenly and sit comfortably around the spaghetti. At a separate cold space, the child stirs the chopped tomatoes, tomato purée and oregano together in a bowl. Keep the lentils and measured water ready beside it, leaving a clear space around the cooker.

3. Soften the vegetables
Warm the oil in the large saucepan over a medium-low heat. Add the carrot, pepper, courgette and mushrooms and stir for about 10 minutes. They should soften and release some moisture without catching on the base. Add a tablespoon of the measured water if the pan looks dry. Stir in the garlic for a further minute. Keep the pan handle turned safely inward and children at their cold work area.

4. Let the lentils become tender
Add the tomato mixture, drained lentils and all the remaining measured water. Bring to a gentle bubble, then reduce the heat and cover loosely. Simmer for 40–50 minutes, or longer if the packet requires, stirring regularly across the bottom. Add hot water in 50 ml splashes if it becomes too thick before the lentils soften. They are ready when easily crushed and no longer firm or chalky. The finished sauce should be thick but spoonable; simmer uncovered briefly if watery.

5. Cook the spaghetti
Once the lentils are nearly tender, the adult brings a large pan of water to the boil and cooks the spaghetti for the time on its packet. Stir after adding it so the strands separate. Lift out one strand with a utensil, cool it briefly and check that it is cooked to your family's liking. Drain carefully in a stable colander, keeping children away from the sink and steam. Keep the sauce on a low heat while the pasta finishes.

6. Serve and explore
Divide the spaghetti between bowls and spoon the sauce over it, or toss both together in the large pan off the heat. Add the optional pepper. Let the portions cool to a comfortable eating temperature before passing them to children. Invite your Little Chef to spot a piece of carrot or pepper and describe the sauce. There is no need to turn tasting into a challenge: familiar pasta and a small first spoonful can be enough to begin.
