Colourful Vegetable & Egg Rice — ready to share.

See hard grains become tender, vegetables soften and beaten egg turn into golden pieces. Small pieces bring several colours to one spoon.

This lesson is for school-age children with an attentive adult. Children work only at a cool counter; the grown-up manages knives, draining, hot pans and all cooking. Freshly cooked rice is the starting point here. Read the steps first to coordinate cooking.

Who does what?

Little Chef

  • Measure dry rice, wash vegetables, count ingredients and whisk the eggs at a cool counter without tasting.

Grown-up

  • Cut every vegetable, open eggs if needed, cook and drain rice, manage the hob and pan handles, and check doneness and serving temperature.

Make it step by step

1. Prepare a rainbow of small pieces

Wash hands and clean the work area. Children measure the dry rice and wash the carrots, pepper and broccoli under running water. Put them in separate bowls. Keep frozen peas frozen until their cooking step.

On a stable board, the adult trims the vegetables: cut carrots into very small dice, pepper into small squares and broccoli into small florets, slicing the tender stem finely. Peel and finely chop the ginger and garlic. Small pieces soften evenly. Put the knife away before children return.

2. Cook the rice freshly

The adult cooks the measured rice following its packet, including the water amount and any rinsing, simmering or resting instructions. Water amounts vary between rice types. Keep pan handles turned safely inwards.

When ready, the grains should be tender with no hard centre. The adult drains if required and fluffs gently with a fork. Use the rice promptly; never leave it sitting out to cool for later.

3. Whisk the eggs at the cool counter

The adult cracks the eggs into a small checking bowl one at a time, removes any shell and transfers them to the mixing bowl. Children beat with a fork until the whites and yolks form an even yellow mixture. Keep the bowl on a non-slip surface.

Do not taste raw egg. Once the whisking job is finished, wash hands and clean the fork, bowls and any splashes before handling cooked food. Set out a clean plate for the cooked egg.

4. Cook soft, fully set egg pieces

The adult warms 1 teaspoon of the oil in the large pan over a medium heat and adds the beaten eggs. Pull the setting egg across the bottom with a heatproof spatula, making small folds.

Cook until all the egg is set, with no runny patches, usually about 2–3 minutes. Break it into bite-sized pieces and move it onto the clean plate. Adding these pieces later helps preserve their shape.

5. Soften, combine and heat through

Add the remaining 2 teaspoons of oil to the pan. Cook the carrots, pepper and broccoli over medium heat for 3 minutes, stirring. Add 3 tablespoons of water, cover and cook for about 4–6 minutes, until a fork enters the carrot easily. Add a splash more water if the pan becomes dry. Stir in ginger and garlic for 1 minute.

Cook the frozen peas according to their packet, separately if necessary, then add them. Fold in the freshly cooked rice, cooked egg and soy sauce. Stir over the heat until every part is steaming hot. Check the vegetables are comfortably tender and the egg remains fully cooked.

6. Make a colourful bowl

The adult turns off the heat and fills the bowls. Leave each portion until it is comfortably warm before bringing it to the child’s place. Use clean serving spoons; the raw-egg fork stays away from the finished dish.

Spot the colours in each spoonful. Begin with a portion that suits each child and offer extra when they are hungry. Enjoy straight away; follow the rice-storage rule below for leftovers.

Little tips, useful discoveries

Make it a meal or a snack

Offer extra cooked vegetables or adult-cut cucumber, and water to drink.

Keeping leftovers

Fresh is best. Divide leftover rice into shallow containers, cool quickly and refrigerate within one hour of cooking; do not cool it in the pan. Keep at 0–5°C and eat within 24 hours. Reheat only once until steaming hot throughout, then cool the serving to a comfortable temperature. Discard rice left out overnight or any reheated leftovers.
